Coconut Milk Pudding
Coconut milk is the traditional food ingredient used in the Southeast Asia, South Asia and East Africa. It is also used for the cooking in Caribbean, tropical Latin America, Western Africa. It is tasty alternative to cow's milk that may provide a number of health benefits. It keeps the heart healthy, aids weight loss, boost the immune system, improves digestion and there are many others. Today we are making the coconut milk custard pudding with only four ingredients which will hardly take 5 minutes to make.
Ingredients:
- 2 cups coconut milk
- 2 tablespoon of custard powder ( you can take of your choice either vanila or strawberry)
- 7-8 teaspoons of sugar as per your requirement more or less
- fresh coconut pieces finally chopped
Take the coconut milk which you get in the market either in tetra packs or in can because if you keep the milk on the gas while stirring the home made coconut milk may get separated though if you want you can try.
Method :
Put the pan on the gas on slow flame. Be careful this dish has to be made in slow flame throughout.
- Take a pan and put the coconut milk in it and keep stirring for 1 minute
- Now put the sugar and keep stirring it
- Take the custard powder and mix it with water to a fine paste and then put it in the coconut milk and sugar mixture. You have to keep stirring it till it forms yogurt like consistency. After it starts to thicken take a whisk and start stirring it.
After you reach yogurt like consistency switch off the gas and put finally chopped coconut and a pinch of salt and give it a nice mix and when it cools down a little keep it in a container or a bowl to set. You can refrigerate it for 1-2 hours and your yum coconut milk yummy healthy pudding is ready to eat. Garnish it with little fresh coconut slices.
